You will need for 1 glass:
4 – 5 Ice cubes
5 – 6 tablespoons gIn
2 tablespoons fresh lemon juice
Pasturised egg white powder (enough for the equivalent of 1 egg)
Half a teaspoon sugar or sugar syrup
3 drops Pernod
ginger ale
1 Put the ice cubes into a cocktail shaker.
2 Pour the lemon juice, sugar and gin over the ice.
3 Add the egg white to the gin mixture.
4 Add the Pernod.
5 Shake until a frost forms.
6 Strain and pour into a lowball glass and top with ginger ale.
